Solo Sauvignon with Grilled rib of beef with fondant shallots and pepper
For 2 people

Rib of beef (500 g)
4 shallots
50 g of butter
Rock salt and pepper from the mill

1. Prepare the fondant shallots. Peel, cut and finely chop the shallots. Place in a saucepan with 50 g of butter. Cook gently for 40 minutes, adding a little water half way through. Leave the water to evaporate completely. The shallots will be fondant and just bound by the butter.
2. Grill the rib of beef, salt and pepper. Cook on both sides for 4 to 5 minutes and then remove from the stove. Place a dish and set aside.
3. Repeat the operation 15 minutes later. Once cooked, carve the met into thin slices and arrange in a serving dish.
4. Sprinkle the meat with the rock salt and fresh pepper. Spread the fondant shallots over the meat.
