Twin salmon tartare recipe details
300 g of smoked salmon
300 g of fresh salmon fillet without the skin
˝ green apple
1 shallot
1 small bunch of coriander
Lemon juice
2 soup spoonfuls of olive oil
˝ teaspoonful of strong mustard
Salt, Tabasco, pepper
1. Peel the apple and remove the pips. Dice and sprinkle with lemon juice.
2. Dice the two types of salmon into a dish. Add the chopped shallot, the apple cubes, the remainder of the lemon juice, the olive oil, mustard, chopped coriander, salt and 2 to 3 drops of Tabasco. Mix and leave in the refrigerator for 1 hour.
3. Before serving, adjust the seasoning and then place in 4 bowls and decorate with a sprig of coriander.
